Sweet and Spicy Chicken Wings

If you ask my daughter, she hates chicken.  I think when she pictures chicken, she imagines unseasoned boneless, skinless chicken breasts.  However, if it has a bone and she can hold it in her fingers that is a totally different story.  If you add a dipping sauce, you have a kid approved meal.

I personally like buffalo wings but, like many children, my daughter won’t touch them.  She won’t eat anything spicy.  For a long time, I’d tell her that candy and other junk food was spicy because that was more than enough to keep her away.

Here is a recipe to satisfy you both!

Ingredients:

For the Wings

  • 2-3 lbs chicken wings
  • 2 tbsp coconut oil, melted
  • 1 tsp salt
  • 1/4 tsp pepper

For the Honey Mustard Dipping Sauce

  • 2 tbsp yellow mustard
  • 2 tbsp honey

For the Buffalo Sauce

  • 2 tbsp coconut oil, melted
  • 3 tbsp apple cider vinegar
  • 2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 -1 tsp cayenne pepper (depending on desired spice)
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions:

For the Wings:

  1. Preheat oven to 400 ° F
  2. Add coconut oil, salt and pepper to a large bowl.  Add chicken wings to coat with the coconut oil.  Place on a large baking sheet.
  3. Cook for 30 minutes then flip your wings over and cook for an additional 20 minutes. (50 minutes total).

Honey Mustard and Buffalo Sauce

  1. Get two small containers.  Mix the honey mustard in one and buffalo sauce ingredients in the other.

To Finish Them Off

  • Kid “Sweet” Version:
    • Remove desired amount of the wings and set aside.  Serve plain with honey mustard dipping sauce.
  • Adult “Spicy” Version:
    • Toss remaining wings in approximately 2 tbsp of buffalo sauce and serve.  Additional sauce may be used to dip, or saved for next time!
